MAGNANIMOUS MANGOLICIOUS VEGAN CUPCAKES⁠

⁠These cupcakes are made with a fresh mango puree that gives them an amazingly sweet and refreshing taste that enlivens all your senses.

Sweet, ripe mangos are considered the king of fruits in Ayurveda. They are helpful in reducing acidity and heat-related issues in your body, great for your skin and hair, immunity boosting, nourishing, strengthening and excellent for your heart health.


Plus, they are orange and happy and festive looking! Mangos are a truly magnanimous fruit that nourish and heal you, from the inside-out, and inspire the same spirit of giving within us.


Love is expressed in actions, as well as our presence. The tree that mangos grow upon are the perfect example in nature of a great, magnanimously loving presence that exists simply to give of itself. The tree's entire presence is there to serve. When we tap into the spirit of the mango tree, we can similarly embody a spirit of service, wherein our cultivation of inner peace can serve as a refuge for others to find shade and relief from.


True love is unconditional like this. It does not seek to control or manipulate others into meeting our hidden agendas. It is magnanimous with no agenda for being that way.

Serves 4.


DRY INGREDIENTS:

  • 1 cup whole wheat flour

  • 1 tablespoon cornstarch

  • 1/2 cup mung dal flour

  • 1 1/2 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon Himalayan pink rock salt

WET INGREDIENTS:

  • 1 1/4 cup pureed ripe mango (in your blender, puree 1 chopped mango with 1 tablespoon or so of water)

  • 2/3 cup jaggery

  • 1 teaspoon apple cider vinegar

  • 3 tablespoons coconut oil

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon cinnamon powder

  • 1/4 teaspoon turmeric powder

MANGO FROSTING:

  • 3/4 cup cashews, soaked for an hour in hot water

  • 1/3 cup coocnut oil

  • 1/3 cup pureed mango

  • 4 tablespoons jaggery

  • pinch of Himalayan pink rock salt

  • pinch of cinnamon powder


METHOD:

  1. Preheat your oven 350 degrees Fahrenheit (180 degrees Celsius). Add muffin liners into a muffin pan.

  2. DRY INGREDIENTS: whisk together all the ingredients in a big bowl.

  3. WET INGREDIENTS: blend all ingredients together.

  4. Add wet mango mixture to the big bowl of the dry ingredients. Stir to combine so that there are no lumps in your muffin batter.

  5. Fill up the muffin liners with the batter. Bake for 24-28 minutes. Allow the cupcakes to cool after you remove from from the oven before removing them from the pan.

  6. MANGO FROSTING: blend all the ingredients for a minute. Pause for 2 minutes, and then blend again for a1 minute. Do this until you get a nice fluffy frosting consistency. If it's still runny, put the frosting into the fridge for 15-20 minutes before frosting the cupcakes (once they've cooled down).


When you bite into a mango cupcake (or the fruit), ask it to reveal to you the way to embody its spirit of generosity. So you can really BE love, rather than seek love.
