Prior to creating vegan, Ayurvedic versions of old favorite recipes, I had not eaten fettuccine alfredo for a very long time!
The old version of it used to sit heavy in my stomach and felt too hard to digest that I used to avoid it, or have it very sparingly, as I would want to fall asleep after eating it! Flash forward to now, and this new version of fettuccine alfredo is creamy and rich, but it makes my mind feel uplifted, refreshed and cheerful.
One of the star ingredients of this delicious recipe is cashews. Known in Ayurveda for providing you with stamina, nourishment and strength, this cashew rich recipe is an amazing source of protein!
I've personally noticed how much of a difference it makes to eat more nuts in my diet since I went dairy free last year. Consuming more nuts in my food in the fall and winter seasons (when they are recommended) has really helped me gain more strength and stamina for intense martial arts workouts!
Serves 4.
INGREDIENTS:
1 1/2 cups raw cashews, soaked in boiling water for at least 20 minutes and drained
Juice from 1 large lemon
1/2 teaspoon hing
2 tablespoons ghee or coconut oil
1 tablespoon spelt flour
1 teaspoon dried oregano flakes
2 teaspoons pink Himalayan rock salt
black pepper, to taste
1 cup coconut milk
1 pound fettuccine (or your favorite pasta)
METHOD:
COOK FETTUCCINE NOODLES: boil a pot of water, add the noodles and cook as long as recommended on the box.
BLEND ALFREDO SAUCE: blend all ingredients together until it is a nice, saucy consistency.
Garnish with parsley or cilantro leaves (optional)!
